So now lets checkout the ingredients and process of making perfect idly batter recipe.

Ingredients Required

  • Uraddal - 2cups
  • Idly ravva/Idly sooji - 4cups
  • Salt - 3tsp

Preparation

1. Add 2cups uraddal into a bowl and clean twice or thrice.

2. Water should be clean and transparent after the cleaning process as shown below

3. Soak for minimum 4 to 5 hours. And 1 hour before grinding the batter soak idly sooji and clean twice.

4. After 5hours uraddal is perfectly ready for grinding.

5. Idly batter will be perfect if grinded in grinder than in mixier grinder. So generally I prefer only grinder for grinding idly batter. And it stay longer period too. So now lets add uraddal into grinder.

6. Add 2cups or more water if needed. It is based on the uraddal you are using.

7. Meanwhile let us squeeze water from idly sooji and keep aside.

8. After the batter is grinded completely, add this sooji into grinder and turn off the grinder after a minute. We are adding the sooji just to mix it with urad batter.

9. Transfer into a bowl and let ferment the idly batter for about 8hrs or overnight. You can see the layer formed on top of the batter, so it is fermented completely. This process of fermentation is based on the weather conditions too. In cool climates it takes more time to ferment, and in hot climates it ferments soon.

10. So now idly batter is ready to use. Just add salt and idlies can be made. Salt can be added while grinding the batter also.
