Brinjal Chutney (Vankai Bajji Pachadi)

                                        

In this article, I’ll share how to prepare vankai bajji pachadi. 
Brinjal is a major part of south Indian cuisine and of all the varieties of recipes Burnt Brinjal Chutney is one. Burning the brinjal might sound a bit confusing but the recipe makes a great side for a wholesome meal.

It is different from normal brinjal chutney. For this we don't need any mixer, grinder. Just we have to roast brinjal directly by keeping it on a stove.

Ingredients Required

  • Brinjal – 1 large
  • Onion – 2 chopped
  • Green chillies – 6 or 7 chopped
  • Oil- 2tbsp
  • Chanadal – 1tsp
  • Uraddal – 1tsp
  • Mustard seeds – 1tsp
  • Cumin seeds – 1tsp
  • Curry leaves
  • Turmeric – 1/2tsp
  • Tamarind – small lemon size
  • Salt – 2tsp or based on your taste
  • Jaggery – 1tbsp

Preparation

  1. Place brinjal directly on stove and cook it till whole brinjal is cooked perfectly and skin to be removed easily
  2. Now remove skin and add brinjal into a mixi jar
  3. Add Salt, cumin seeds,tamarind, jaggery and grind to fine paste
  4. Now add chopped onion and green chillies and mix
  5. For tampering add oil to heated pan
  6. Add chanadal, uraddal, mustard seeds, cumin seeds, curry leaves, turmeric
  7. Now add grinded chutney with tampering and mix all together
